    Longkou vermicelli is also called so oen, so-oen, Chinese vermicelli, or cellophane noodles. It can be used in soups, stir-fries, or as a garnish. It's also often used as a filling in Asian snacks like spring rolls or dumplings.

    It takes about two minutes to absorb the flavors of sauces or soups. You can also fry it in vegetable oil (boil it briefly first) as fried so-oen, which becomes crispy and can be used as a topping for soups like saoto or soto. It's also often used in Asian dishes, as a substitute for wheat noodles or salads.
