The flat beans from the long, twisted pods of the tropical, Asian tree Parkia speciosa. These pods are reminiscent of vacuum-extracted broad beans, of which they are also related. The beans themselves are fresh green and slightly wrinkly, like a green sprayed almond. They have a rather strong odor, hence the nickname “stink bean”.
How to use?
Usually you only use a few peteh beans in a dish, cut into strips if necessary. As a seasoning, for example in a wok dish or very typically: in the sajur loddeh. But sometimes you see dishes with a lot of peteh beans, nice if you like them. Peteh beans are easy to keep in the refrigerator, but also in the freezer.
