Lately I’ve been craving noodles, and one of the most interesting ones I’ve come across is called zaru soba—or cold soba. Have you heard of it? It’s definitely one of the most unique noodle dishes out there!
Instead of the usual noodles served in soup, zaru soba comes with chilled noodles and icy mentsuyu dipping sauce served separately! To eat, you simply dip the cold soba noodles into the cold sauce. It’s sometimes topped with green onions or wasabi for extra flavor!
Zaru soba is a classic Japanese dish often enjoyed in summer. The noodles are made from buckwheat, which gives them a light, nutty flavor and firm texture. The dipping sauce, called mentsuyu, is a chilled mix of soy sauce, mirin, and dashi that pairs perfectly with the cold noodles!
The best part is making zaru soba is super easy! just cook the noodles, rinse them in cold water, and chill. Serve with the dipping sauce on the side, and add a bit of green onion, wasabi, or nori if you like!
If you’re in the mood for something simple but different, zaru soba is definitely worth a try. It’s quick to make, fun to eat, and perfect for warm days. I’m already thinking of having it again soon!
