You know that feeling when a dish just grabs your attention? That happened to me with Bouillabaisse, the famous fish soup from Marseille!
This isn’t just any seafood soup! It’s made with local fishes, sometimes with mussels or crabs, all simmered with onions, leeks, garlic, tomatoes, herbs like thyme and fennel, and a pinch of saffron. The flavors mix into a rich, aromatic broth that’s hard to forget!
Bouillabaisse wasn't always a gourmet dish! It actually started out as a fisherman’s meal! They’d use fish they couldn’t sell and cook it with whatever herbs and veggies they had on hand. Over time, it grew into a dish people traveled to Marseille to eat!
When served, the broth usually goes over garlic-rubbed toasted bread with a bit of rouille sauce. The fish might come on the side or added to the soup at the table. It’s simple but delicious!
And here’s something I find a bit funny! Outside of France, people try to make it with whatever seafood they can find. It works, but it’s not quite the same as fresh fish from the port!
