Petis Udang (shrimp paste) shrimp paste
Petis udang is a kind of marmite, but of shrimp and not bremzout but sweet. The heads of large shrimps are cooked for a long time and then sieved. This "bisque", together with some sugar, a pinch of salt and possibly some chili and garlic, is cooked to a very thick, sticky, almost black paste. Sometimes some flour is also added as a thickening agent. The taste is from concentrated shrimp and sugar. It smells a bit, but is not "rotten / fermented" like trassi.
